When the bag starts off turning white (that stuff’s named “mycelium”), give it a shake to be certain the mycelium spreads all through the whole bag.​ Way too small, and there won’t be adequate mycelium or spores to latch onto the substrate and grow. Too much, and the substrate will become too damp and susceptible to mildew and mildew.
